Tieghan’s Grain-Free Granola with Pistachio, Coffee + Coconut

INGREDIENTS:

1 cup uncooked unsweetened coconut
1 cup uncooked pepitas
½ cup uncooked pistachios
½ cup uncooked almonds
½ cup uncooked cashews
½ cup uncooked sunflower seeds
½ cup uncooked sesame seeds
½ cup cacao nibs
½ cup pure maple syrup
¼ cup coconut oil
pinch of sea salt
1 Tbsp instantaneous espresso granules (elective)
2 tsp vanilla bean paste
½ cup goji berries

DIRECTIONS:
